This is the domaine’s top Savennieres, made from Chenin Blanc, the vineyard plot is shaped like a butterfly, hence the name (papillon=butterfly in French!). This wine explodes from the glass with intense mineral notes. Complex, medium-bodied and profound, its concentrated core displays an array of flavors. Honeysuckle blossoms, sun dried spices, almonds, chalk, and white flowers are found throughout its nuanced personality as well as in its prolonged finish. Wow! What a beauty!

The family takes great care in preserving the integrity of their special terroir that helps produce highly aromatic wines. Very few wines in the world are made from pure Cabernet Franc, as it can only develop its flavors and delicacy in stable climatic conditions like the Loire Valley. A slight animal note is a characteristic of its gravelly soil; the mouth is firm, the tannins marked in the finish, carried by generous acidity and a nice fruit balance. A classic food pairing is with rillettes (potted meat), crackling, poultry or fresh goat’s cheese but also pairs lovely with roasted and grilled meats. If you thought you liked Cabernet Franc, you will LOVE this one!

This delicious dessert wine of Chenin Blanc comes from the same domaine as the Clos du Papillon. This wine got big points from a certain famous wine magazine; and although we don’t usually talk about points, we do agree that this wine is at the top of its class. With a nose that speaks volumes, the palate is no less impressive, stuffed full of honey, toffee-caramel flavors with a hint of floral minerality. This wine transcends all others!
